Ingredients:
#1 Chickpea & Sweet Potato Wrap
1 small to medium sized sweet potato
1/2 cup chickpeas, drained (~100g)
1/2 apple (or more)
hummus
a handful of fresh baby spinach
parsley, fresh or frozen
juice of 1/2 lemon
1-2 tsp white tahini, feel free to add more
seasoned salt to taste
1 avocado
1/2 red onion, cut into thin rings
*yields 2 wraps
#2 Savory Oatmeal
1 small onion, red or yellow
1 cup oats, super fine (~90g)
1 1/2 cups of water or vegetable stock (more of needed) (375ml)
1 tsp smoked paprika
1 tsp dried Italian herbs
juice of 1 lemon
salt to taste, optional
1 Tbsp nutritional yeast
1/2 cup kidney beans (~90g)
a handful of frozen spinach
topping ideas: avocado, grated carrot, sprouts, fresh herbs
*yields 1-2 portions
[Sundried Tomato Paste]
a handful of sundried tomatoes (oil free), soaked in hot water for 10 min, then drained
1 tsp tomato purée
1-2 Tbsp maple syrup
1 tsp good quality olive oil (optional)
3 Tbsp water (or more if needed)
#3 Avocado & Apple Bread
2 pieces of whole wheat bread
1/2 avocado
1/2 lemon
1/2 tsp dried Italian herbs
seasoned salt to taste
1/2 apple, cut into thin slices
walnuts, cress, fresh herbs for the top
