These Vegan Tiramisu Mousse cups are creamy and rich. They are infused with the flavours of tiramisu.
Just require 7 simple ingredients!
INGREDIENTS
*1cup=240ml, 1Tbsp=15ml
*No Substitution Suggestions Unless Specified.
MOUSSE
• 1 cup raw cashews, soaked overnight
• ¾ cup scoopable coconut cream (sub full-fat coconut milk)
• ¼ cup maple syrup (adjust to taste)
• 1 tsp vanilla extract
• 1 Tbsp finely ground coffee beans (adjust to taste)
• Pinch sea salt
GANACHE
• 70g vegan dark chocolate (we used 70%)
• ½ cup scoopable coconut cream (sub full-fat coconut milk)
INSTRUCTIONS
1. Add all ingredients for the mousse into a blender, and blend until creamy and smooth.
2. Divide the mousse between serving glassed.
3. Place in the fridge until set (for about 1-2 hours)
4. Make the ganache, and add the ganache on top of each mousse.
5. Place in the fridge to set – until the mousse is chilled and the ganache is semi-firm to touch.
6. Store leftovers covered in the fridge for up to 4-5 days.
